Chile Salsa with Roasted Vegetables

Fresh onions, tomato and green pepper are roasted to enhance the rich flavor of this mild salsa.  Serve with tortilla chips or on top of your favorite Southwestern dish.

  1. Preheat oven to 450 degrees.
  2. Combine vegetables with olive oil in a large bowl. Spread out on a large pan and roast in the oven for 30 minutes, turning once or twice.
  3. Remove from oven and allow to cool until manageable.
  4. Add to a food processor with the salsa and pulse until the salsa achieves a chunky texture. Serve with tortilla chips.
