Chicken Enchiladas, traditionally made from corn tortillas, can also be made from flour tortillas.  This recipe is quick and easy to make with a precooked rotisserie chicken from your favorite market.

Chicken Enchiladas, traditionally made from corn tortillas, can also be made from flour tortillas. This recipe is quick and easy to make with a precooked rotisserie chicken from your favorite market.

Ingredients
  • 1 rotisserie chicken, skin removed, deboned, and shredded
  • ¼ cup Roadrunner Chile Company Fire-Roasted Green Chile
  • 1 pound Monterey Jack Cheese, divided
  • 12 small corn tortillas or flour tortillas
  • 2 ½ cups Roadrunner Chile Company Red Chile Cooking Sauce, divided
Instructions
  1. Preheat oven to 350 degrees F.
  2. Place the shredded chicken into a large mixing bowl. Stir in the green chile and half of the shredded cheese.
  3. Pour half of the red chile cooking sauce into the bottom of a 9” x 13” baking dish and spread the sauce out evenly.
  4. Lay the floured tortillas out onto a clean work surface and divide the chicken mixture among the tortillas placing the filling in the center of the tortilla. Fold one edge of the tortilla over the filling and roll the tortillas over the filling into a tight cylinder. Place the rolled tortillas into the baking dish. Repeat filling and rolling the tortillas until all the tortillas are filled and placed into the dish. Repeat until all the tortillas are rolled, filled and placed tightly against each other into the dish.
  5. Pour remaining sauce over the filled tortillas and top with remaining cheese.
  6. Bake until the cheese is melted and the filling has warmed through – approximately 15-20 minutes.

This recipe is so………….easy, and for the wonderful cook that I am ( ha ha ), I can make these and get them right and they will come out great. I am looking forward to trying these.
