Gluten-free Green Chile Cheese Sticks


Savory gluten-free green chile cheese sticks are made with gluten-free flour, mustard, fire-roasted green chile, cheddar cheese, butter and salt.  They take only 30 minutes to make and are the perfect finger food for snacks and parties.  Serve alone or with our green chile salsa for dipping.  Great treat for kids who enjoy spicier food.

  • 1-1/2 cups gluten-free flour mix
  • 1 tsp ground mustard
  • 4 oz Roadrunner Chile Company Gourmet Roasted Green Chile, drained
  • 2-1/2 cups shredded cheddar cheese
  • 1 stick butter, softened
  • 1tsp kosher salt
  1. Preheat oven to 375 degrees.
  2. Mix flour, mustard and salt thoroughly in a medium bowl.
  3. Add chile and mix until the chile is thoroughly coated.
  4. In an electric stand mixer, mix together butter and cheese. Gradually add the chile-flour mixture and mix until it is all uniform in color.
  5. Form the dough into a ball (add a little green chile juice from the jar or milk if the dough is too dry). Roll out the dough on an unfloured surface to ¼" thickness. Cut into bar shapes of equal size and put onto a parchment paper lined pan (you may need to repeat two or three times depending on the size of your pan to use up all of the dough).
  6. Bake for about 12 minutes, until golden brown. Allow to cool. Yields about three dozen sticks, depending on size.
