Green Chile and Cheese Fritters

Whip up a batch  of green chile and cheese fritters and pop them in your mouth. These tasty treats are too yummy to last long!

  1. Mix egg and buttermilk together in a large bowl.
  2. In a separate bowl, mix together flour, cornmeal, baking soda, sugar, and salt.
  3. Combine both mixtures in the large bowl. Add the chile and the cheese and mix well.
  4. Fill a large skillet with oil to about one inch and heat. Add the batter by the heaping tablespoon. Cook on one side until golden, about 1 minute, then flip and cook the other side. Remove from the skillet and drain on paper towels.
  5. Fritters can be served with a mild salsa, but I prefer a "fry sauce", made up of one part ketchup, one part Roadrunner Chile Company Green Chile Salsa, and two parts mayonnaise (add finely chopped pimento and green onion for color).
