Green Chile Chicken and Apple Soup

Chicken and wild rice soup gets a delicious Southwestern makeover with the addition of fire-roasted green chile, apples, and lime juice.

Ingredients
  • 1⁄3 cup oil
  • 2 cups boneless chicken, cubed
  • 1⁄2 cup chopped onion
  • 1 tablespoon minced garlic
  • 1⁄4 cup flour
  • 2 cups Roadrunner Chile Company Fire-Roasted Green Chile
  • 2 cups cooked wild rice
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • Juice of 2 limes
  • 4 cups apple cider
  • 2 cups chicken broth
  • 2 cups apples, pared, cored and chopped
Instructions
  1. In stock pot or large, high-sided skillet, heat oil over medium heat. Add chicken and cook until lightly browned.
  2. Stir in onion and garlic. Add flour and cook, stirring constantly, for 1–2 minutes.
  3. Add chile, rice, salt, pepper, lime juice, cider and chicken broth. Cover, reduce heat and simmer for 30 minutes.
  4. Add apples and simmer another hour or so.
