Green Chile Corn Chowder

The robust flavor of this savory green chile corn chowder really hits the spot on a cold or rainy day.  It’s also a great one-dish meal any time of year.

  • ½ cup diced thick cut bacon
  • 1 medium onion, chopped fine
  • 4 medium potatoes, peeled and diced
  • 2 cups low sodium chicken broth
  • 1 12-ounce can evaporated milk
  • 1 cup Roadrunner Chile Company Gourmet Fire-Roasted Green Chile
  • ¼ tsp salt
  • 1 11-oz can whole kernel corn, drained
  • 1 15-oz can creamed corn
Instructions
  1. In a large skillet or dutch oven, cook bacon till done. Remove bacon bits to a separate bowl with a slotted spoon.
  2. Cook onion in bacon fat until translucent. Add potatoes and broth, cover and simmer for about 15-20 minutes until potatoes are done.
  3. Stir in bacon and remaining ingredients. Simmer 15 minutes more and serve.
