Green Chile Mac 'n' Cheese Spice up your Mac 'n' Cheese! This recipe for creamy, rich tasting, scrumptious homemade macaroni and cheese is for those who enjoy their food a little bit spicy.

Ingredients
  • 8 ounces uncooked elbow macaroni
  • 3 slices of thick cut bacon or pancetta
  • ½ onion, minced
  • 3 tablespoons butter -- divided plus extra for greasing pan
  • 2 tablespoons flour
  • 1 cup heavy cream
  • ½ cup sour cream
  • ½ cup half and half
  • 2 cups Roadrunner Chile Company fire-roasted green chile
  • 2¼ cups grated Gruyere or Cheddar cheese (or both!) divided
  • ½ cup grated Parmesan cheese
  • Salt
  • Freshly ground black pepper
  • ½ cup seasoned bread crumbs
Instructions
  1. Preheat oven to 350 degree F.
  2. In a large pot of boiling water, cook the pasta to al dente according to package directions. Drain and rinse to prevent pasta from sticking.
  3. While the pasta is cooking, cut bacon or pancetta into small pieces and cook in small skillet until done. Remove pieces with a slotted spoon and save.
  4. Add onion to the fat and cook until wilted.
  5. Melt 2 tablespoons butter in large saucepan over medium-low heat. Whisk in flour and cook, whisking constantly, 3 minutes.
  6. Gradually whisk in heavy cream, sour cream and half and half.
  7. Stir in onion and green chile. Simmer gently, stirring often, 15 minutes.
  8. Remove from heat and stir in bacon/pancetta and 1½ cups cheese. Season to taste with salt and pepper.
  9. Stir in macaroni.
  10. Pour half of mixture into greased, deep 1½-quart baking dish and sprinkle with half of remaining cheese. Top with remaining macaroni and remaining cheese.
  11. Melt remaining 1 tablespoon butter in small skillet over medium heat. Add bread crumbs and toss to coat. Sprinkle buttered crumbs and Parmesan cheese over top of macaroni.
  12. Bake until top is lightly browned and bubbly, about 30 minutes. Let stand about 15-20 minutes.
