Toss a little heat into your pasta salad.  Green Chile Pasta Salad is great as a side dish or add chicken or salmon for a complete meal.

Green Chile Pasta Salad is made with fire-roasted green chile from the Hatch Valley of New Mexico. Add chicken or salmon for a complete meal.

Ingredients
  • ½ cup Roadrunner Chile Company Fire Roasted Green Chile with "juice"
  • 1½ teaspoons salt
  • 2 cloves garlic, crushed
  • ½ cup white wine vinegar
  • ¾ cup extra virgin olive oil
  • 1 teaspoon lemon juice
  • 1 tablespoon mayonnaise
  • ½ pound uncooked pasta (it is best with a tricolor variety)
  • 1 cup broccoli, cut and blanched
  • ½ cup sliced black olives
  • ¼ cup diced pimento
Instructions
  1. Mix the first seven ingredients for dressing together in a bowl. Boil pasta per package directions, drain and let cool. Mix in vegetables and dressing, allow to sit in the refrigerator for a few hours, and then mix again before serving. To make it a meal, add 2 cups of cooked diced chicken or salmon.
