Green Chile Relleno Casserole

Our fire-roasted green chile makes this delicious casserole simple to make.  It can also be prepared ahead of time and popped into the oven for a quick weeknight meal or dinner party.

  1. Preheat oven to 350 degrees F.
  2. Beat half and half with eggs and flour until smooth.
  3. Mix cheeses.
  4. Coat the inside of a 1-1/2 quart casserole dish with non-stick cooking spray.
  5. Add ⅓ of the chile to the bottom. Pour in half the egg mixture, then top with ⅓ of the cheese. Repeat with ⅓ of the chile, the other half of the egg mixture, ⅓ of the cheese, and the remaining ⅓ of the chile. Pour tomato sauce over top and sprinkle with the remaining third of the cheese.
  6. Bake covered with foil for 45-50 minutes, then remove foil and bake another 15-20 minutes until cooked in the center (toothpick should come out clean).
