Ingredients
  • 2 tbsp olive oil
  • 2 pounds boneless pork, cut into 1-inch cubes
  • ½ cup chopped onion
  • 1 garlic clove, minced
  • ¼ cup flour
  • 2 cups fresh tomatoes, peeled and chopped
  • 2 cups Roadrunner Chile Company Fire-Roasted Green Chile
  • 1 tsp salt
  • ½ tsp sugar
  • 6 cups chicken broth
  • 3 medium white potatoes, peeled and cubed
  • Black pepper to taste
Instructions
  1. Heat olive oil in 4-quart Dutch oven with cover. Add pork and cook until lightly browned.
  2. Add onion and garlic and stir with meat. Add flour and stir 1-2 minutes.
  3. Add tomatoes, green chiles, salt, pepper and sugar. Mix to incorporate.
  4. Add broth and potatoes and bring the stew to a boil. Lower heat. Cover pot and simmer for 1- 1½ hours until meat and potatoes are tender.
