Green Chile Tarragon Crab Bake

If you love crab, this recipe for green chile tarragon crab bake is for you!  The delicate flavor of the crab plays nicely against the sweetness of the tarragon and spiciness of the chile and simply melts in your mouth!  Pairs nicely with medium-bodied whites and sparkling wines such as a Sauvignon or Pinot Blanc.

Ingredients
  • ¼ cup butter or margarine
  • 2 Tbsp flour
  • ¼ tsp salt
  • 1 Tbsp minced parsley
  • 1 tsp tarragon
  • ¾ cup milk
  • ½ cup Roadrunner Chile Company Fire Roasted Chopped Green Chile
  • Juice of one lemon
  • 1 tsp grated lemon peel
  • 16 oz crab meat, drained and flaked
  • ½ cup shredded cheddar cheese
  • ¼ cup buttered bread crumbs
Instructions
  1. Melt butter in a medium saucepan.
  2. Stir in the flour and salt and whisk to a smooth paste.
  3. Add parsley and tarragon and stir 30 seconds.
  4. Gradually add the milk, stirring until smooth.
  5. Bring to a slow boil over medium heat, stirring occasionally.
  6. Stir in lemon juice, lemon peel, green chile, and crab and fully incorporate.
  7. Transfer to a greased half-quart casserole dish.
  8. Sprinkle with cheese and bread crumbs.
  9. Bake at 375 degrees for 15-20 minutes until top is lightly browned.
