Red Chile Cauliflower Bites

Ingredients
  • 1 head cauliflower, cut into bite size florets
  • ¾ cup all-purpose flour
  • 1 tsp garlic salt
  • 1 tsp dry mustard
  • 1 cup buttermilk
  • Red Chile Chicken Wing sauce:
  • 2 tbsp butter or margarine
  • ¼ cup white vinegar
  • 1 tsp sugar
  • ½ cup Roadrunner Chile Company Gourmet Red Chile Cooking Sauce
  • Hot sauce (optional)
  • Blue cheese or ranch dressing (optional)
Instructions
  1. Preheat oven to 450 degrees.
  2. Spray a large cookie sheet with nonstick spray.
  3. Whisk together flour, garlic salt, mustard, and buttermilk.
  4. Dip each floret in the batter to coat, then place on the cookie sheet. Bake approximately 15 minutes until golden.
  5. While cooking the cauliflower, make the chicken wing sauce.
  6. To make the sauce, melt butter in a small saucepan, mix in vinegar, sugar, and red chile sauce. Add hot sauce if desired to increase the heat.
  7. Dip each cauliflower piece in the wing sauce to coat, then return to the oven for 3-5 minutes until the wing sauce is baked on.
  8. Serve with your favorite blue cheese or ranch dressing.
