Ingredients
  • 1 cup finely chopped cooked chicken
  • ¼ cup sour cream
  • ¼ cup Roadrunner Chile Company Gourmet Red Chile Cooking Sauce
  • 24 Doritos® Scoops® chips
  • 4 slices thinly sliced Colby Jack cheese
  • 24 slices black olives (optional)
Instructions
  1. Preheat oven to 325 degrees.
  2. Pick out 24 Scoops(R) chips from the bag that are unbroken and fairly deep and place single layer on a cookie sheet.
  3. Mix chicken, sour cream, and red chile sauce in a saucepan on low heat until combined and heated through.
  4. With a small spoon, fill each chip with the chicken mixture.
  5. Using a cookie cutter or a substitute (we use the cap from a cocktail shaker) cut 1-1/4 to 1-1/2 inch diameter circles from the cheese slices and place on top of each bite.
  6. Place in the oven about 10 minutes, until the cheese is melted and bubbly. A black olive slice may be added to each bite for decoration.
