Red Chile Chow Chow Relish

Here is a New Mexican variation of a favorite Cajun condiment that is loved throughout the Deep South.  Red Chile Chow Chow Relish is a terrific topping for burgers, hot dogs, sausages, ham, turkey….you name it!

Red Chile Chow Chow Relish

Ingredients
  • 4 cups green cabbage, finely chopped
  • 2 cups green tomatoes, peeled and finely chopped
  • 2 cups finely chopped sweet onion
  • ½ cup red sweet pepper, finely chopped
  • 1 tsp celery seed
  • ½ tsp tumeric
  • 1 tsp mustard seed
  • ½ cup Roadrunner Chile Company Gourmet Red Chile Cooking Sauce
  • 1 cup white vinegar
  • ½ cup brown sugar
  • ¼ tsp ground ginger
Instructions
  1. Add all ingredients to a large pot, stir to mix. Bring to a boil over medium heat, then lower the heat and simmer about 20-30 minutes uncovered until the mixture achieves a "relish" consistency.
  2. Remove from heat and cool.
  3. Refrigerate overnight.
  4. Makes a terrific topping on burgers, hot dogs, sausages, ham, turkey, you name it.
