Ingredients
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 4 cloves garlic, crushed
  • 1 28-oz can crushed tomatoes with juice
  • 1 tsp salt
  • 1 cup Roadrunner Chile Company Gourmet Red Chile Cooking Sauce
  • 16 oz cooked shellfish (bay scallops, medium shrimp, lobster pieces or all three!)
  • 2 tbsp fresh chopped Italian parsley
  • 1 tbsp fresh chopped basil leaves
Instructions
  1. In a large skillet, add oil and heat. Add onion, cook until translucent.
  2. Add garlic and cook for a minute more.
  3. Add tomatoes, salt, and red chile, simmer covered for 30 minutes.
  4. Put in the seafood, cook for 5-10 minutes more until heated through. Add parsley and basil, mix well, then serve over cooked linguine pasta.
