Quick and simple, Huevos Rancheros is a hearty Mexican breakfast made from tortillas, eggs, refried beans and cheese. It will keep you fueled all morning.
Serves: 1
  1. In a shallow skillet, heat oil. Add tortillas one at a time and fry lightly on both sides. Drain on paper towel.
  2. On an ovenproof dish, apply a schmear of the red chile sauce. Top with the tortillas (overlapping is fine). Spread the beans on top. Add the eggs, cover with the remaining red chile sauce, top with the cheese.
  3. Put the plate under a broiler just until the cheese melts and serve immediately.
Note: you can also substitute Green Chile Sauce or Carne Adovada (see separate recipes) for the Red Chile Sauce.
