Red Chile Peanut Sauce with Chicken

  • 8 boneless skinless chicken thighs (or 2 pounds of your favorite boneless chicken cut)
  • 2 Tbsp peanut or sesame oil
  • 2 minced garlic cloves
  • ¾ cup Roadrunner Chile Company Gourmet Red Chile Cooking Sauce
  • ¼ cup smooth peanut butter (preferably all natural)
  • ½ cup low sodium soy sauce
  • ¼ cup water
  • 2 Tbsp rice vinegar
  • 2 Tbsp hoisin sauce
  • 2 cups cooked rice
  • 2 Tbsp chopped scallions (optional)
  1. Preheat oven to 375 degrees.
  2. In a large skillet over medium heat, add oil and then, when oil is hot, add the chicken.
  3. Cook chicken until brown on all sides, then remove to an ovenproof casserole dish.
  4. Add garlic to the skillet, cook lightly, about 30 seconds, then add all the rest of the ingredients except the rice and scallions.
  5. When the sauce is heated and combined thoroughly, pour it over the chicken.
  6. Cover the casserole dish and place it in the oven for about 30 minutes or until the chicken is cooked through.
  7. Serve over the rice sprinkled with the scallions.
East meets Southwest.  Savory chicken with red chile peanut sauce can be served over rice or greens.  The richness of the peanut butter is balanced by garlic,  red chile cooking sauce,  soy sauce, rice vinegar, and hoisin sauce.
