Red Chile Shepherd’s Pie

Shepherd’s Pie is a traditional casserole made with ground beef, peas and carrots and topped with mashed potatoes.  Easy to prepare, this shepherd’s pie recipe takes the flavor up a notch with the addition of red chile cooking sauce.  It’s spicy but oh so satisfying.

Ingredients
  • 2 tbsp vegetable oil
  • 2 pounds ground beef
  • 1 small onion, diced
  • 1 cup Roadrunner Chile Company Gourmet Red Chile Cooking Sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 10-oz box of frozen peas and diced carrots, thawed
  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 2 cloves garlic, minced
  • ½ cup buttermilk or half-and-half
  • ¼ cup butter
  • ½ cup grated Parmesan cheese
  • Salt and ground white pepper to taste
Instructions
  1. Preheat oven to 400 degrees F. Add oil to a large skillet and heat, then add beef and onion and cook until meat is brown and crumbled. Drain. Add chile, Worcestershire sauce, and tomato paste and simmer 15-20 minutes until sauce thickens. Add peas and carrots and cook for 5 more minutes. Add this mixture to a greased 13 x 9 baking dish.
  2. Boil potatoes in salted water about 20 minutes until done. Drain, then mash with garlic, buttermilk or half-and-half, butter, salt, pepper, and cheese. Spread potatoes over the top of the meat mixture with a fork. Bake 20-25 minutes until browned on top. Allow to rest for about 15 minutes before serving.
