Ingredients
  • 6 cups cooked rice
  • ¼ cup sesame oil
  • 1 cup chopped onions
  • 2 garlic cloves, minced
  • 1 tsp ground ginger
  • 2-1/2 cups unsweetened coconut milk
  • 1 cup Roadrunner Chile Company Red Chile Cooking Sauce
  • 1 tsp salt
  • 2 lbs large shrimp, peeled and deveined
Instructions
  1. Heat oil in a large skillet over medium heat. Add shrimp and stir frequently until they are pink and cooked through, about 3-5 minutes.
  2. Remove the shrimp with a slotted spoon to a separate dish. Add onions and cook for 5 minutes.
  3. Lower heat, add the garlic and ginger and continue cooking for 1 minute.
  4. Add coconut milk, chile, and salt, simmer for 25-30 minutes uncovered until thickened.
  5. Strain sauce through a colander and then return it to the skillet.
  6. Stir in shrimp and heat through. Serve over rice.
