Ingredients
  • 1 cup thick cut bacon, diced
  • 1 cup yellow onion, chopped
  • 2 tsp garlic, minced
  • 3 tsp yellow mustard
  • 1-1/2 cups dark brown sugar
  • 1-1/2 cups ketchup
  • 1 cup Roadrunner Chile Company Red Chile Cooking Sauce
  • 2 Tbsp liquid smoke
  • ½ tsp salt
  • 4 16.5-oz cans plain pinto beans
Instructions
  1. Preheat oven to 325 degrees F. In a medium skillet, fry bacon until it renders. Remove the bacon with a slotted spoon and set aside.
  2. Fry the onion and garlic in the bacon fat.
  3. In a 2-quart casserole dish (with lid), combine all the ingredients except for the beans.
  4. Rinse the beans in a colander until the water runs clear, and then carefully stir the beans into the casserole mixture. Cover and bake in the oven for 2 hours, then uncover and continue baking another 30 minutes.
