This refreshing, chilled gazpacho soup is the perfect starter course for a summer meal. Made with fresh watermelon and tomato, the flavor is both sweet and spicy.

Ingredients
  • 6 cups seedless watermelon, diced
  • 1 cup Roadrunner Chile Company Gourmet Red Chile Cooking Sauce
  • ¼ cup extra virgin olive oil
  • Juice of 3 limes
  • 1 tsp honey or maple syrup
  • ¼ cup sweet onion, diced
  • 1 garlic clove, minced
  • 1 medium to large tomato, peeled seeded and diced
  • ½ red bell pepper, diced
  • 1 pear, peeled cored and diced
  • 1 tsp salt
Instructions
  1. Add the watermelon to a blender and pulse until completely processed. Strain into a large serving bowl.
  2. Add chile and oil.
  3. Back to the blender, combine the remaining ingredients until completely blended.
  4. Mix thoroughly into the watermelon mixture.
  5. Cover and refrigerate at least six hours to make sure the soup is chilled through and ingredients have had a chance to merge their flavors. Gazpacho should be served as cold as possible so don't put into serving bowls until just before it is served.
