Red or Green Chile Enchilada Casserole

  • 3 cups cooked filling of your choice (shredded beef, pulled pork, pulled chicken, ground beef, roasted vegetables)
  • 3 (16-ounce) jars Roadrunner Chile Company Red Chile Sauce or 6 cups Green Chile Sauce (see separate recipe)
  • 18 corn tortillas
  • 2 cups shredded Monterey Jack cheese, divided
  • 6 hard-fried eggs and chopped raw onions (optional)
  1. Preheat oven to 350 degrees F.
  2. In a mixing bowl, combine filling and sauce; mix well.
  3. Spread one-quarter of filling-sauce mixture in 9"x13" pan. Place 6 tortillas over sauce in a single overlapping layer. Spread one-third of the cheese over tortillas, top with another one-quarter of filling-sauce mixture. Repeat layering. Top with remaining tortillas and filling-sauce mixture. Cover with foil. Bake 30 minutes.
  4. Uncover, sprinkle with remaining cheese. Bake an additional 5-10 minutes uncovered, or until cheese is bubbly.
  5. If desired, top with fried eggs and chopped onions before serving.
