Secret Ingredient for a GREAT Green Chile Cheeseburger!

 

green chile cheeseburgerWe get asked all the time for a recipe for the Green Chile Cheeseburger, and our answer is always that we have none. That’s because everyone has his/her preferences about their burger– type of meat, bun, cheese, condiments, etc–which makes coming up with a real recipe pretty much impossible. But we DO have a “secret ingredient” for making a great burger that we can share with you. Actually, it’s not really so secret–Chef Bobby Flay used it to win first place with his Green Chile Cheeseburger at the 2013 South Beach Wine and Food Festival’s Burger Bash in Florida not too long ago. Here it is in three simple words: PICKLED RED ONIONS. The recipe for that is super simple, and here it is:

Thinly slice one large red onion. You can cut rings or half-moons, your preference. Mix together 1/2 cup of water, 1 cup of any light colored vinegar (we prefer rice, white wine, or apple cider), and 1/3 cup of granulated sugar over high heat in a small saucepan until it boils. Remove from the heat. Throw in the onion slices and one sliced garlic clove and stir in. Allow to cool. Put everything in a covered nonreactive container and store in the refrigerator for at least 3-4 hours. Then enjoy! They will last in your refrigerator for several weeks, but they are best if eaten within the first week or so.

The rest of the burger is up to you– just make sure it has plenty of Roadrunner Chile Company Fire Roasted Green Chile on top!
