The Iconic Green Chile Cheeseburger

Green Chile Cheeseburger

Anyone familiar with New Mexican cuisine knows that green chile is the defining ingredient. It can be found in all sorts of recipes: sauces, breakfast dishes, appetizers, soups and stews, entrées… even desserts.  But perhaps the most celebrated use of the New Mexico chile is the green chile cheeseburger.

The green chile cheeseburger first became popular in the 1950s at roadhouses scattered along Route 66 in New Mexico.  Hungry motorists in need of sustenance savored the tangy green chile that gave the classic American cheeseburger a unique southwestern twist.    Many have claimed credit for this culinary creation, but even historians cannot agree on who is allowed to make this assertion.

Eateries that often receive at least partial credit for the green chile cheeseburger’s rise to fame are Buckhorn Tavern in San Antonio and Bobcat Bite near Santa Fe – both featured in Alan Richman’s The 20 Hamburgers You Must Eat Before You Die (GQ, July 2008) – along with Burt’s Burger Bowl in Santa Fe, The Owl Café in San Antonio and Blake’s Lotaburger in Albuquerque.

The green chile cheeseburger has since become the object of obsession for tourists and foodies thanks to numerous magazine and newspaper articles and features on popular cooking and travel shows.  In 2009, celebrity chef Bobby Flay further drew New Mexico’s green chile cheeseburger into the national spotlight – and suffered defeat – when he challenged Buckhorn Tavern’s Bobby Olguin of to a green chile cheeseburger cook-off on Food Network’s Throwdown with Bobby Flay.

Today, tourists seeking an authentic, mouth-watering green chile cheeseburger can follow the Green Chile Cheeseburger Trail in New Mexico and sample countless variations along the route.   Created after 8,000 locals and visitors cast their ballots for their favorite green chile cheeseburger, the trail weaves throughout the entire state and includes all sorts of restaurants, drive-ins, roadside stands, cafés…even bowling alleys.  Every location along the trail lays claim to making the best green chile cheeseburger and fans of this unofficial state food argue passionately about who is most deserving of the title.
